| Ingredients for 2 people:
- 1 stalk of celery
- 1 small carrot
- 1 piece of cucumber of 6-7 cm
- 2 chicory leaves
- 2 tablespoons of tahini 1 tablespoon of lemon juice
- 1-parsley 4-5 tablespoons of water
- 2 cloves of garlic
- Gomasio (food store) or salt and pepper.
Wash the vegetables and cut them into bars of 6-7 cm. Peel the leaves of chicory and use them as a ‘boat’ to dip. Put the tahini with the juice, parsley and water in a bowl. Squeeze the garlic cloves above. Puree the whole with the hand blender into a smooth sauce. Season the sauce with pepper and gomasio or salt. Serve the sauce in a small bowl and dip the vegetables in it.
